I don’t know where I came across this little article but as a baker I found it interesting.  I must confess sometimes I don’t read the recipe through and it has created a problem for me from time to time! Sometimes when I do read the recipe through I still forget something! Hope these hints come in handy for you!

Top Five Baking Rules Courtesy of Dorie Greenspan:

Before you even start read the recipe all the way through, then read it over again

Have all of your ingredients measured out and at room temperature before you start mixing

Preheat the oven for at least 20 minutes check the temperature periodically with an oven thermometer

Make sure your baking soda and powder haven’t expired old leaveners lose their rising power.  And sniff your spices.  If they don’t have a lot of fragrance, neither will whatever it is your are making

Don’t be a slave to the timer. Check on your treat before the time’s up and don’t be afraid to let it bake a little longer if necessary.  Time is only one clue to doneness, color and texture are important,too.
