Too Hot to Bake Try No Bake Frozen Lemonade Pie!

So what to do on a hot day when baking is just out of the question but you have to make something either for yourself or the company you have coming over! Try a bake free dessert! Our friends at Arubula’s Kitchen shared with us their recipe for a Frozen Lemonade Pie which has gotten rave reviews.  We would like to share it with you!  We give you the original version for the Frozen Lemonade Pie, a modified version, and even a way to make it dairy free by substituting dairy free products! Original Recipe Frozen Lemonade Pie:
1 8oz pkg cream cheese
1 small packet of powdered lemonade flavoring (like crystal light or country time)
1 3 oz pkg vanilla pudding
1 8oz container cool whip thawed
1 1/4 cup cold milk
15 lemon sandwich cookies, crushed
1 graham cracker crust

Beat cream cheese and lemonade mix until smooth. Mix the milk and pudding together for about 2 minutes- it will be thick. Beat it into cream cheese. Beat 1/3 of cool whip into mixture then fold the rest along with most of the crushed cookies (set aside some for topping). Pour mixture into crust and top with remaining cookies. Freeze until frozen (can be refrigerated, but tastes better frozen).

Arubual’s Kitchen modified Frozen Lemonade Pie Recipe:
1 8oz pkg cream cheese (For a dairy free version use tofutti.)
1 cup powdered countrytime strawberry lemonade- it makes it a really pretty pink color too
2 6oz containers of vanilla so delicious yogurt
1 6oz container vanilla pudding
make your own whip and fold it in for fluffier pie*
10 blonde Oreos, crushed
3 blonde Oreos, halved
1 cup, hulled and quartered strawberries
1 graham cracker crust (I make my own, but store bought was fine)
Untested but after success of this recipe you could add fresh mint leaves

*Homemade Whip

3T sugar (table sugar is great, powdered sugar is even better) to 1 pint heavy cream or whipping cream with a light splash of vanilla. Whisk by hand quickly until light and fluffy.

Beat cream cheese and lemonade mix until smooth. Mix in yogurt and pudding. Beat in whip. Fold in the rest of the whip, cookies, and most of the strawberries- saving some for topping, mint if you are using. Pour mixture into crust and top your pie with strawberries and halved cookies. Freeze (about 2 hours)

So we at Bakes 4 Breast Cancer decided to make the modified version and used a store bought graham cracker crust.  A quick trip to the market where we could not find the strawberry lemonade mix, we had no choice but to substitute raspberry lemonade and raspberries in place of strawberries.  This is a very quick and easy recipe which of course was tasted along the way and the batter was astonishingly good!  A bit nervous about using the powdered raspberry lemonade since it is something we never used.  It added perfect flavor.  Another wonderful surprise was the golden Oreos, another new product for us since we usually get the original Oreos. Golden Oreos are a great cookie which we wish we tried before! We wonder how it would taste if not frozen since the batter was good out of the bowl but stuck to the recipe and froze the pie. We also think the batter could be used in a trifle recipe.

The pie went into the freezer and tasted.  The Frozen Lemonade Pie was excellent and refreshing on a hot humid evening!
