No-Bake White Chocolate Fudge

A friend of mine asked me to make him “anything with white chocolate” for his birthday.
July was far too hot and humid to turn the oven on for more than five minutes so I realized I had to do something quick, easy, and no-bake.  The answer, of course, was fudge.
But I’d never made fudge, so I scoured the internet for ideas.  This No-Bake White Chocolate Fudge recipe was inspired by the bits and pieces of different recipes combined to create my own.

1 stick of butter
2 cups sugar
2 cinnamon sticks (or 1 tsp cinnamon powder)

Add the above in a saucepan over …

White Chocolate Cookies

It started off as a bid to use up all my white chocolate squares and ended as a lesson in substitution. I love white chocolate cookies so I decided that instead of buying chips, I would cut up the squares into chunks and use them in the recipe instead. I also had to substitute baking soda with baking powder. I’ve read that a good tip is using about twice the amount of baking powder as soda and omitting the salt in the recipe. I also left out brown sugar, adding a little bit more white to make up for it.

Oatmeal & White Chocolate Chip Cookies

Once a month, I bake sweets and bring them to work to share with my coworkers. Shhh, they don’t know it, but they’re my guinea pigs, since the treats that I bring are usually from a new recipe that I’ve never tried before. Of course, if the results aren’t to my liking, then I don’t share them.
This week, I made oatmeal and white chocolate chip cookies, recipe adapted from ericasweettooth‘s blog, original recipe from Cook’s Illustrated. They are a little different from traditional oatmeal cookies; they’re thin, crispy, made with *white* chocolate chips and have a salty finish. It is …

Cheese and Chocolate: two foods that are music to my ears and satisfaction to my appetite.

The sweet, smooth flavor of chocolate is said to improve a person’s mood by releasing endorphins and serotonin, making it a feel-good food for both your state-of-mind and your taste buds.
And then there’s cheese. The endless varieties can satisfy any savory craving. From the everyday grilled cheese sandwich with sharp cheddar or baby swiss, to fresh green salads with chunks of feta or goat cheese; cheese makes everything better.
So, in honor of these two highly desired foods, today’s gadget is a tribute to them both: …

Everything Bars

This is my first actual baking post in a while. If you recall my last few posts have been either purely informational or rather simple and straight forward, I haven’t had a whole lot of time on my hands. However this week as I finally got settled back into my weekly Boston schedule I managed to set aside an afternoon devoted to baking decadence. Since I haven’t baked in a while I had a hard time deciding what to make, I had stacks of recipes I wanted to try but couldn’t figure out which one to choose. Did I want …

Plane Snacks

I know that in my last post I bragged about where I am, and I’m sorry that I have to do it again but you’ll see why shortly. Currently I am in the glamorous city of Dubai with my best friend. We are visiting her cousins who live here and are having a fabulous time. The weather is great, the sights are stunning and the food is well, truly delicious. I could post 10 things about all the delicious food I have eaten here so far but instead I’m going for a different more available post that everyone can enjoy, …
