I was looking for an easy enough recipe for Fourth of July – at first I wanted to go all fancy and make a triple layer cake decorated with strawberries and blueberries, but because of time, I needed something straightforward, and you can’t really go wrong with cupcakes. So, in honor of Independence Day, here is a recipe for patriotic cupcakes, courtesy of skiptomylou.org. {Note: The cake recipe is from allrecipes.com}

Ingredients:

  • 1 cup white sugar
  • ½ cup butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 ¾ teaspoons baking powder
  • ½ cup milk
  • Red and blue food coloring

Directions:

  • Preheat the oven to 350 degrees F. Line cupcake pan with paper liners.
  • In a medium bowl, cream together the butter and the sugar. Beat in the eggs, one at a time, then stir in the vanilla.
  • In separate bowl, combine flour and baking powder. Add to the creamed mixture and mix well. Stir in the milk until the batter is smooth.
  • Divide the batter into three bowls and add red colouring to one and blue to another. Fill cupcake liners with batter in whatever order you want so that you have a layer of each color.
  • Bake for 20 to 25 minutes. The cupcakes are done when they springs back to the touch.
  • Allow to cool completely and frost.
