Part 2 Food Trucks in the Suburbs! Burrito Dave’s

If you ask Karen and Dave what the biggest hurdle they had so far was updating the truck. It is not easy to get all the equipment in and out of the truck through the back window sideways!

The Window!

Then it was a matter of picking a location to call home.  Burrito Dave’s only lasted a few days in Chelmsford before moving to Needham. Why Needham?  First the Town of Needham allowed them to set up shop and they recognized Needham was a food town with many restaurants and friendly people.

So they set up shop in an office park and then late one afternoon made their way to Highland Avenue and West Street where in one afternoon they made more than they had all day at the office park!  So it was bye bye office park and hello Highland Avenue at least for now! Finding the right location is key to a food truck’s success along with serving good food.

Burrito Dave’s has been in Needham since June, endured a hot summer and are getting a following! They are learning as they go, working hard and having fun!

What is a day on a food truck like? Long! They work a minimum of twelve hour days mostly standing on their feet in a space no bigger than a galley kitchen five days a week unless they are doing a festival on a Saturday and then it will be day number six.  Will Burrito Dave’s be open this winter?  That remains to be seen since this after all is their first season operating a food truck.

How does their day start?  Around 8:30-9:00 a.m. Karen and Dave get organized for their day.

9:00-9:30 a.m., they head to the truck to get it ready.

10:00 a.m. the truck is at the location in Needham.   They are getting ready, setting up and are busy cooking so they will be ready for lunch.  Depending upon business Karen and Dave might still be working till 6:30 or 7:00 p.m. before closing up shop, dropping off the truck, food shopping for the next day.  Hopefully they will make it home around 9 PM.

What is for dinner when you have been on a food truck all day?  Cereal!
