As with every holiday, preparing a meal which consumes days to make and is eaten in less than 60 minutes is always challenging.  Balancing the shopping, cooking, cleaning and your everyday life has challenges!  Somehow everything gets done no matter how exhausted we are or how many trips to so many markets we have to go to get everything we need!

Somehow I came across this recipe for a no bake Rocky Road Treat for Passover.  I was intrigued!  What would a no bake dessert using Matzo Farfel taste like?  Anything I have made with Matzo Farfel has always been baked, never in the state that it comes out of the box.  Let’s admit it Farfel tastes like a bland cardboard. I am sorry to say that but it is true.

How can using Matzo Farfel out of the box taste in a dessert?  Much to my surprise quite amazing!   A quick to make Passover dessert recipe with five ingredients, no baking and tastes great!  The Farfel holds everything together but what you taste is the chocolaty dessert to satisfy anyone’s sweet tooth!

Enjoy this recipe that I found.  It will be now be a staple for my holiday.  When making this recipe I got a bit lazy and spread the mixture on a baking sheet.  The dessert sits in my refrigerator ready to go!

I guess it is time to set the table now!  Happy Passover.

Rocky Road Chocolate Treats

  • 5 ounces mini marshmallows
  • 2 cups matzoh farfel
  • 2 cups chopped walnuts
  • 12 ounces chocolate chips, melted
  • 1 tablespoon oil

Line a large baking sheet with foil. Set aside.

In a large bowl, toss together the mini-marshmallows, matzoh farfel, and walnuts. Set aside.

Combine the oil with the melted chocolate and stir until smooth. Pour the melted chocolate over the marshmallow-farfel-walnut mix. Stir until all the ingredients are completely coated with chocolate. Drop a spoonful at a time on the prepared cookie sheet. Refrigerate until set.

Alternative method: Spread the entire mixture on the baking sheet in an even layer. Refrigerate until set, then break into bite size pieces.
