Halloween is around the corner and it is one of my favorite holidays – I love the jack-o-lanterns, costumes, candy, and the endless decorating ideas, especially for baked goods. I haven’t baked anything for this holiday yet so I’m showing you what I made a couple years ago: Halloween Oreo cupcakes. These were a hit at my office and super easy to make – since I cheated and used cake mix from the box; plus, the simple decor didn’t take much effort. My favorite part of these cupcakes is the Oreo cookie bottom of the cupcakes – it’s a nice surprise, especially for Oreo lovers!

 

Oreo Cupcakes recipe (yields 24)

Ingredients:

  • 1 box white cake mix (I used Betty Crocker super moist white cake mix; you will need 1-1/4 cup water, 1/3 cup vegetable oil, and 3 egg whites)
  • 1 package Oreos (regular or Double Stuff)
For the frosting:
  • 2 sticks of butter
  • 4 cups powdered sugar
  • 3 tbsp milk
  • 1 tsp vanilla
Directions:
  1. Make cupcake batter according to package directions; set batter aside.
  2. Line cupcake pan with liners
  3. Twist apart 24 Oreos – place 1 wafer (cream side) facing up in each liner
  4. Save the other 24 wafers (blank side) for garnish; crush into pieces as desired
  5. With the remaining *FULL* Oreos in the package (approx. 21), put them in a ziplock bag and crush them
  6. Fold crushed Oreo pieces into cake batter
  7. Fill cupcake liners a little over 3/4 full and bake according to package directions
  8. For the frosting: beat the butter in mixer until light and fluffy. Gradually add sugar until completely mixed. Gradually add milk and vanilla; combine until smooth.
  9. When the cupcakes are completely cool, decorate with frosting, Oreos (whole or crushed), and/or Halloween decor.

 

Jamie’s tips for this recipe:

  • When crushing the Oreos in the ziplock bag, use a rolling pin. The bottom of an ice cream scooper works well, too – just don’t puncture the bag or it’ll be a mess!
  • If you like more crunch in your cupcakes, try not to crush the Oreos too fine.
  • As for decorating, I bought toy spider rings and used Halloween-themed liners from iParty. I also sprinkled crushed Oreos for the “dirt” appearance. Other ideas: gummy worms, Milano cookies gravestones with “RIP” written in icing on them, ghost and pumpkin marshmallow peeps, etc.
